Adelaide Hills with its Cool and dry climate, rolling green hills, and high altitude was the reason behind the first settlers on Adelaide hills region deciding to grow Sauvignon Blanc. Nowadays Adelaide Hills Sauvignon Blanc is world renowned due to its ancient soil and its reputation.
Grapes are harvested during cool nights to capture the vibrant fruit characteristics of cool climate Sauvignon Blanc fruit.Small parcels of fruit grown in two distinct microclimates were selected to capture the distinct herbaceous and riper fruit characteristics of Sauvignon Blanc. Fermentation occurred separately in small stainless steel tanks to maintain fresh, lively characters and varietal characteristics typical of Sauvignon Blanc.Varietal aromas include citrus, passionfruit, apple and floral notes. The wine has clean fresh palate showing lemon and lynches up front and mineral hints on the back palate and naturally refreshing acidity.
